The July 4 grilling menu

Friday night: A big porterhouse steak (on sale at Safeway).

Tonight: Smoked ribs and grilled chicken (I’ll marinade the chicken in mojo criollo and season it with nothing other than Lawry’s seasoning salt; the ribs use more of a traditional rub, with brown sugar). We have a few folks coming over.

Tomorrow: We had planned tacos but now I’m thinking of tacos al carbon, using the burnt ends I made during a recent brisket cook.
